Oatmeal Iced Cookies
I LOVE baking during the holidays! Every year, I try new cookie recipes, and end up with an abundance of cookies. Don’t worry, I don’t eat them all :), and thankfully they make great gifts, even for the mail-person.
This year, I wanted to try and perfect some recipes, or come up with my own. I got the idea for this Oatmeal Iced cookie from Mother Thyme, and fell in love.
The cookie is soft and mouth-watering, followed by a little crisp from the royal icing. My husband has already eaten a bajillion of them ;D
Ingredients:
2 cups old fashioned oats
2 cups flour
1 tbs baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsps cinnamon
1/2 tsp nutmeg
1 cup (2 sticks) softened butter (I use salted butter)
1 cup brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
Cream butter and sugars, add in vanilla and one egg at a time. Mix until light a fluffy. In another bowl, whisk together the flour and dry ingredients, except the oats. Spoon in the flour mixture a little at a time to the sugar/butter mixture until incorporated. Mix in oats.
Using a small ice cream scooper, scoop the dough onto a parchment lined cookie sheet and bake at 350 for about 8 minutes.
Once cooled, ice with royal icing recipe.
Royal Icing:
2 cups powdered sugar
2 tbs meringue powder
3 tbs water
1/2 tsp vanilla
Blend together with mixer. If its too thick, add a little more water until the desired consistency (about the texture of pancake batter).
