I’ve been making these cookies for a few years and are always a huge hit. One particular math teacher loves the cookies down to her toes!
They are buttery, the right amount of sweet and the perfect little crunch that takes that, “can’t have just one,” thing to a whole new level.
You can roll these out and make them into little bite-sized squares, or roll them and smash them with a fork, like I did here.
1 1/2 cups salted butter, softened
3/4 cups powdered sugar
2 1/4 cups flour
3/4 cups cornstarch
1 tsp vanilla
Non-Parelis (teeny,tiny ball decorations)
In your handy-dandy stand mixer, or your hand mixer, if that’s what you have, cream the butter with the powdered sugar. Slowly add in the other dry ingredients until all is fully incorporated.
You can mix in the little decoration balls, or sprinkle them on top. Personally, I like them mixed in, but my daughter says she prefers them sprinkled on top. Either way is fine.
Then, either roll them out and cut them into bite-sized little squares, or roll them into little balls and them smash them with a criss-cross fork design.
Bake at 350 until lightly browned, and then bag them up and give them to your favorite math teacher for Christmas 😉
